Chicken Burger Base:

  • 1 teaspoon dijon mustard
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon liquid smoke (optional)
  • 23 tablespoons frozen butter, shredded

  • 1/4 cup white onion, shredded
  • Kosher salt
  • Ground black pepper

Instructions

  4. Mix ground chicken with grated onion, butter, garlic, worcestershire sauce, mayonnaise, dijon mustard, lemon zest, liquid smoke, and parmesan cheese in a large bowl.
  5. Thoroughly blend all ingredients until well incorporated.
  6. Line a baking sheet with parchment paper.
  7. Form the mixture into 4 equal patties, approximately 1/2-3/4 inches thick, creating a small indent in the center of each.
  8. Refrigerate patties for 20 minutes to firm up and maintain shape.
  9. Season patties generously with kosher salt and ground black pepper.
  10. Lubricate grill grates with olive oil using tongs and a paper towel.
