Description

  • 1 1/2 cups (355 ml) vegetable broth
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) tomato paste

Instructions

  1. Combine flour, oatmeal, ginger, and baking soda in a spacious mixing vessel.
  2. Create a well in the center of the dry ingredients and pour in golden syrup, treacle, and melted butter.
  3. Incorporate beaten eggs into the mixture, stirring gradually to form a cohesive batter.
  4. Fold ingredients until just combined, avoiding overmixing to maintain a tender texture.
  5. Transfer the batter into a greased and lined 20cm square baking tin, ensuring even distribution.
  6. Preheat the oven to 140°C and bake for approximately 1 hour and 15 minutes.
  7. Check doneness by inserting a skewer into the center – it should emerge clean with minimal crumbs.
  8. Remove from oven and allow to cool completely in the tin.
  9. Once cooled, slice into traditional rectangular pieces.
  10. For enhanced flavor, wrap the parkin and store for 3-4 days to allow the spices to develop and soften the cake’s texture.
