Scale
Main Protein:
- 2 cups (473 ml) vital wheat gluten
- 1/2 cup (118 ml) nutritional yeast
Spices and Seasonings:
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon chili powder
- 1 teaspoon fennel seeds, crushed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Liquids and Binding Agents:
- 1/4 cup (59 ml) soy sauce
- 1 1/2 cups (355 ml) vegetable broth
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (15 ml) tomato paste
Instructions
- Combine flour, oatmeal, ginger, and baking soda in a spacious mixing vessel.
- Create a well in the center of the dry ingredients and pour in golden syrup, treacle, and melted butter.
- Incorporate beaten eggs into the mixture, stirring gradually to form a cohesive batter.
- Fold ingredients until just combined, avoiding overmixing to maintain a tender texture.
- Transfer the batter into a greased and lined 20cm square baking tin, ensuring even distribution.
- Preheat the oven to 140°C and bake for approximately 1 hour and 15 minutes.
- Check doneness by inserting a skewer into the center – it should emerge clean with minimal crumbs.
- Remove from oven and allow to cool completely in the tin.
- Once cooled, slice into traditional rectangular pieces.
- For enhanced flavor, wrap the parkin and store for 3-4 days to allow the spices to develop and soften the cake’s texture.
Notes
- Experiment with alternative flours like whole wheat or gluten-free blends for dietary adaptations.
- Add extra moisture by incorporating mashed bananas or applesauce to prevent dryness.
- Use parchment paper instead of foil for easier unwrapping and less potential sticking.
- For a richer flavor, toast spices before mixing to enhance their aromatic qualities.
